Eggplant timbale over slightly spicy oregano flavored tomato coulis
Fried mozzarella “tea sandwiches” with Dijon mustard flavoring


Organic vegetable soup served with genoa pesto and crispy bread toasts
Spaghetti from Gragnano with fresh  tomato and diced buffalo mozzarella
Tuscan sausage and green cabbage risotto served in a parmesan cup
Robiola cheese, leek and crab stuffed crepes, au gratin
Ricotta and spinach dumplings in melted butter and sage sauce
garnished with parmesan petals


Wild boar stew with Tuscan herbs served with fried polenta
Farmyard chicken supreme cooked with white wine,
crispy bacon and green beans almandine
Lamb chops sautéed in a three-pepper sauce with stewed artichokes
Filet mignon with porcini mushrooms cream sauce with wild mint enhancement
Mediterranean-style branzini filets with escarole and ligurian olives
“Baccalà” codfish with leeks and pearl onions
